I kept track of a few different stats throughout the trip. My Fitbit kept track of steps, walking miles, calories burned, and sleep duration while I manually tracked driving distance and Fuel Burned by manually entering values into a Google sheet whenever I got gas.
To me the trip is split into a few distinct sections: A long backpacking trip to start with no driving, then road-tripping every day and making frequent stops followed by a long period of no driving while being sedentary in Albuquerque and Austin. Then the final stage is returning home at a pretty breakneck pace with a short stop in San Jose
